Jean Luc Pelé - Pâtissier Chocolatier
The three specialities which have made him famous: macaroons, chocolates and pastry.A shop where you can see the pastry chefs at work. A well designed place contributing to an upmarket feel in Old Antibes. Funnily enough, it was after his time as a martial arts teacher that Jean-Luc Pelé switched to a career in pastry-making, when he was to launch a chain of shops starting in Meudon, then Cannes.
The craftsman has gone one step further in Antibes: he has created a convivial area greatly inspired from the atmosphere in Tim Burton films. "I had an unused corridor, intended for leading to the upper floor via a hidden door. I had the idea of coating the walls and ceiling in edible chocolate. I created a framework, and threw chocolate onto the walls so that it formed a sort of edible wallpaper. For the chocolate to stay in place without melting, I maintain the room temperature at 20 degrees with a humidity control system. The room has a delicious chocolate smell and will develop over the coming months with the creation of stalagmites, in chocolate too, like in a real cave."
